Meet Tamu Lola, owner of the Toque Verte and Flute's new resident chef!

Tamu Lola was born and raised in Tbilissi, Georgia. She developed a love for cooking at an early age, helping her father in the family kitchen and learning basic techniques. In many ways her father became her inspiration and lit in her a passion for cooking that would never cease to shine. Soon, Tamu Lola started developing her very own recipes.

 

In 1999, she moved to NYC, with the hope of building her own American Dream. She studied at a French Culinary Institute in SoHo where she graduated in Culinary Arts. The legendary chefs she met there taught her the core of French cuisine of course but also made her discover a more modern way of cooking.

She used everything she learnt, the old school cuisine, as well as newer technics to create her very own cuisine, that's innovative, gourmet and healthy at the same time.

For years she worked as a private chef, cooking for high profile clientele and celebrities. With Toque Verte, she mainly does catering, which allows her to serve more people while canapés and appetizers are perfect for her to express her creativity.

The name she chose for her company is the embodiment of her principles. The toque is the chef hat in French, and represents the gourmand/gourmet side of her cuisine. Verte, green in French, shows she's aiming at a healthy, organic cuisine because she believes food can be tasty and still good for you.

 

Her inspiration comes from daily life, chefs' dishes or artworks. A painter herself, Tamu Lola's creations are tasty and beautiful at the same time. Because sight is the first sense you use to taste, she wants to create dishes that are appealing to the eyes, preparing one for the coming deight.

She also names her creations, always finding the right words to make the experience complete.

Our personal favorite is the "he loves me, he loves me not", a beautiful flower, whose petals are made of watermelon with indentations filled with balsamic vinegar caviar (created by using molecular gastronomy).

Flute is proud to have Tamu Lola catering for their New Year's Eve parties. Their guests will be enjoying the finest food with the Champagnes or cocktails that will be served that night!

A new collaboration between Flute Gramercy and Toque Verte is about to start as well. In 2014, la Dame à la Toque Verte will become the resident chef at Flute Gramercy and will also be catering for events taking place in all three Flute locations.
